My friend Laura shared this recipe with me. She finds some of the greatest stuff! They look like cookies, taste like muffins, and please a crowd. Admittedly, I've yet to find a pumpkin-chocolate chip recipe that doesn't excite me.
2 C flour
1 1/2 tsp baking powder
1 tsp soda
1/2 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp cloves
2 eggs
1 C sugar
1/2 C vegetable oil
1 C pureed pumpkin
1 tsp vanilla
1 C chocolate chips
Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In a separate bowl, beat eggs and sugar until smooth. Add oil, pumpkin, and vanilla and mix to combine. Add the dry ingredients and mix to combine. Stir in chocolate chips.
Drop on to silpat or parchment lined baking sheets in approximately 1/4 cup portions. Smooth tops slightly. Bake at 425' for about 15-18 minutes. Allow to rest on baking sheet for several minutes before cooling on wire racks.
