Now these are addictive! This recipe is supposedly a knock-off of Starbucks' oatmeal fudge bars.I haven't had the originals to know how authentic these are, but I can attest to how delicious they are! Simple to make, but they taste so decadent!
1 C butter (divided)
2 C brown sugar, packed2 eggs
2 tsp vanilla (divided)
3 C flour
1 tsp baking soda
3 C rolled oats
1 1/4 C sweetened condensed milk
2 C chocolate chips
Preheat oven to 350 degrees F.
Set aside 2 tablespoons of the butter. Beat the remaining butter with mixer. Add brown sugar and beat until well mixed. Beat in eggs and 1 teaspoon vanilla. In another large bowl, combine flour, baking soda, and oats. Gradually stir flour mixture into butter mixture. Set aside.
In a small pot, combine the reserved butter (2 Tblsp), sweetened condensed milk, and chocolate . Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in remaining (1 tsp) vanilla.
Press three quarters of the oat mixture into the bottom of an 9X13 pan. Spread chocolate mixture over the oat mixture. Using your hands, dot the remaining oat mixture over the chocolate.
Bake for about 25 minutes or until top is lightly browned (chocolate mixture will still look moist). Cool on a wire rack.
*Little note on the baking dish: The original recipe called for a strange size pan that I don't have (10X15, I think) so I just used a 9X13. I found the bottom oat mixture to be a bit thick, so I may try dividing this recipe into too smaller pans next time.
