This is my favourite way to use leftover cooked vegetables. Stir/mash all veggies together in a bowl (this was potatoes, broccoli, cauliflower, and carrots). It's okay to have some chunks. :) Stir in a little grated cheese, and salad dressing/mayo/something to unify the textures and flavours. (my kids love ranch and blue cheese dressings, so we usually use those). Scoop out spoonfuls into a non-stick pan over medium heat. Press with your spatula to form a pancake. Cook until lightly browned on both sides, and serve warm.
