Baked French Toast with Berries

I wanted to try a new recipe for a breakfast bake this past weekend. I love my baked french toast, but it is certainly not healthy. I wanted something that I felt better about serving on a regular basis. Inspired by this recipe from The Gracious Pantry, I set off to make something that I could feel good about serving any time.

6 C cubed, day-old bread (I used French bread, but a crusty multigrain loaf would be great too)
5 eggs
1 1/2 C coconut milk (or any dairy or non-dairy milk)
1 t vanilla extract
1/2 t coconut extract (or additional vanilla extract)
2 Tblsp brown sugar (optional...coconut or almond milk add a lot of sweetness on their own)
2 tsp cinnamon
1/2 tsp nutmeg
1/4 C unsweetened flaked coconut, divided
2 C fresh or frozen berries

Place cubed bread in a greased 9X13 pan. Whisk eggs, coconut milk, extracts, sugar, spices, and  3 Tblsp of flaked coconut to combine. Pour over bread, and mix to coat all pieces. Allow to soak for at least 30 minutes. Before baking, top with berries and sprinkle with remaining 1 Tblsp flaked coconut. Bake at 350' for 35-45 minutes, or until set. Cool 5 minutes before cutting. Serve with maple syrup, if desired.
