I spotted this recipe on Our Best Bites, titled An Idaho Sunrise. It is such a great idea - all of your big breakfast fixins' in one happy little bundle! It is simple to make these in any quantity, whether for just one person or a whole crew. You can personalize these any way you like to suit your likes, dietary restrictions, or simply what's in the fridge.
I baked my potatoes in the microwave, because I'm a slacker like that (14 minutes, flipped halfway). Since they are baked a second time once they are filled, the skin can crisp up then. If you want to really bake your potatoes, just put them in a 425`oven for about 45 minutes.
1 baked potato per person
Finely chopped vegetables (tomato, peppers, onions, etc)
Finely chopped ham, bacon, or breakfast sausage
Grated cheese
1 egg per person
Salt and pepper to taste
Cut a long thin slice off one side of potato. Using a spoon, scoop out some of the flesh. You are essentially carving out the area that you are going to stuff, so you can take out more or less of the flesh depending on what/how much you want to put inside. Just be sure you don't scrape right down to the skin, as you need some of the flesh to keep the shape intact (plus it's so darn delicious).
Sprinkle a little cheese inside the potato, and top with finely chopped vegetables & meat. Gently crack an egg on top of the vegetable layer, and top with a little cheese. Add salt and pepper to taste. Bake at 350` for about 12-15 minutes, until whites are set but yolk is still soft.
