I bookmarked this soup ages ago, but finally tried it this week. Super fast and easy to make, very healthy, and extremely inexpensive. It passed my "Healthy, Cheap, and Easy" test with flying colours! Did I mention that my kids loved it? This will be a staple for us this winter!
1Tbsp oil
3 carrots, sliced
2 onions, chopped
2 cloves garlic, minced
1 Tbsp minced ginger

1/2 tsp salt
1/4 tsp pepper
6 cups vegetable or chicken stock
3/4 C red lentils
1/2 tsp salt
1/4 tsp pepper

1/2 C plain low-fat yogurt (for garnish)
In large pot over medium heat, heat oil and cook carrots, onions, garlic, ginger, cumin, salt and pepper, until the until onions are softened. Stir in stock and lentils. Bring to boil, reduce heat, and cover. Simmer until carrots and lentils are tender (about 15 to 20 minutes). Remove from heat and, using an immersion blender, puree until smooth.
Return to heat to warm if necessary. Serve each bowl with a dollop of plain yogurt.
