Oatmeal Chocolate Chip Cookies

Another mom brought these delicious oatmeal cookies to playgroup a couple of months ago, and I was glad she was willing to share the recipe. They are probably the best oatmeal cookie I've ever had - soft without being crumbly, chewy without being undercooked, and just the right amount of crispiness on the bottom. I made them with mint chocolate chips, which was a yummy little surprise in there. (Of course, my picky-eating three year old says that anything mint flavoured tastes like toothpaste, so I baked a few for him before stirring the chocolate chips in to the batter)

1 C butter
1 C brown sugar
1/2 C white sugar
2 eggs
1 tsp vanilla
1 C rolled oats
2 C flour
1 tsp baking soda
1 tsp baking powder
1 C chocolate chips

Cream butter and sugars well. Beat in eggs and vanilla until smooth. Combine oats, flour, baking powder, and baking soda. Mix dry mixture into wet mixture. Stir in chocolate chips. Form into balls and place on cookie sheet. Do not flatten. Bake at 350` for 8-10 minutes.

  1. Wow, I like your idea of using mint chocolate chips. I've never thought to do that before. I have a sweet treat linky party going on at my blog until tomorrow night and I'd like to invite you to stop by and link your cookies up. http://sweet-as-sugar-cookies.blogspot.com/2011/02/sweets-for-saturday-5.html
