I have long seen this recipe on various blogs and recipes sites, but just recently made it for the first time. It was easy and yummy - though
I'd reduce the amount of crushed red pepper next time. Even though the original recipe calls for less than a teaspoon, slow cooking really brings out the flavour and we found it a tad spicy.
2 boneless chicken breasts, cut into bite-sized pieces
1-2 garlic cloves crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 C brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 C water
1/3 C soy sauce
2 tbsp of corn starch
Mix all ingredients into your crockpot, then add the chicken. Cook on high for 2-3 hours or on low for 4-5 hours. Serve over rice.
