I made Red Velvet Mini-Cakes for Valentines day. They are adorable, but they leave lots of scraps in the pan. What can you do with those (besides nibbling them)? Make Bakerella's cake balls, of course! Since I just had my cake bits leftover, I can't give you exact measurements to go on - I just mixed the crumbled cake with the leftover icing until it just seemed right. Then, as Bakerella notes, just roll into balls, freeze, and dip into melted white chocolate. What a sweet treat to make from leftovers!
