In search of a chewy chocolaty cookie, I found this recipe at Enlightened Cooking. They were quick and easy to mix up, but I found them a little crispy once they cooled. After spending the night with a piece of bread in the cookie tin though, they were perfectly chewy for my tastes!
1 cup flour
1/3 cup cocoa
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup sugar
1/3 cup shortening
2 tsp vanilla
1 egg
1/3 cup chocolate chips
Sift together flour, cocoa, baking powder, baking soda, and salt. In a separate bowl, beat sugar and butter on high until well blended. Beat in the vanilla and egg until blended. Mix in flour mixture and chocolate chips until just blended.
Drop by spoonfuls, two inches apart, onto greased/parchment/silpat cookie sheet. Flatten slightly. Bake approximately 12 minutes or until puffed in the center. Remove from oven and cool on pan for 5 minutes, before cooling completely on wire racks.
