1 ½ Cups Packed Brown Sugar
2/3 Cups Vegetable Oil
1 Egg
1 tsp Vanilla
2 ½ Cups Flour
1 tsp Salt
1 tsp Baking Soda
1 Cup Milk
2 Cups blueberries (fresh, or thawed and drained)
Preheat oven to 350 degrees F (175 degrees C). Grease bundt pan.
In a large bowl, beat brown sugar, oil, egg, and vanilla together until smooth. Combine flour, salt and baking soda; add to sugar mixture alternately with milk. Beat until smooth. Stir in berries. Pour into prepared pan.
Bake for 60-70 minutes, or until the cake tests done.
It was delish after dinner last night with a little fresh whipped cream. Mmmmmmm...(It was also pretty darn good today, mid-morning, with a cup of coffee!)
oh please oh please post the rhubarb thing, I LOVE rhubarb!
