Sweet Potato Pancakes

I found this recipe in the February issue of Today's Parent magazine. They are pan fried in oil, so it's definitely not an everyday side dish for our house...but it was a nice treat!

2 medium sweet potatoes, peeled and coarsely grated
2 green onions, finely chopped
2 eggs, lightly beaten
1/3 cup flour
1 tsp salt
1/4 tsp pepper
oil for pan

Combine everything (except the oil) in a large bowl. Mix thoroughly. Pour enough oil into skillet to thickly coat the bottom. Place over medium heat just until a drop of water sizzles when it hits the pan. Add the sweet potato mixture to the pan by heaping spoonfuls about an inch apart. Press each one with spatula so it sticks together. Cook about 2 minutes per side or until browned. Remove from pan and drain on paper towel. If making them in batches, keep warm in a 300' oven. Serve with salsa and/or sour cream. (I already ranted about my frozen sour cream below, so we just had salsa...)

  1. Sweet potato pancakes are a big hit around my home. The kids even know that I smuggled something good for them into the pancakes, and they still are alright with them.
