For Josh's birthday, I used
this cupcake recipe, but made 2 -8' layers (adjusted the cooking time to about 30-35 minutes). I frosted it with the icing in the recipe, minus the shaved coconut and plus a couple teaspoons of coconut extract. The sides of the cake were rolled in shaved chocolate. Mmmmm....I wish there was a slice left to have right now!
We had it last night with friends after a dinner of Thai take-out. Laura pointed out that a coconut milk cake was well-suited to our Thai menu. Ummmmm.....yeah. That was my intention, right?
