Whenever I take these muffins someplace, people ask me for the recipe, and are floored at how healthy they are. We are addicted to them...
1 Egg
¾ C Skim Milk
3 Tbs Oil
½ C White Sugar
1 Medium apple - peeled and chopped (I use Cortland)
¾ C cranberries (I use frozen, and usually add more like 1 cup)
1 C Oats
1 C Flour (I use whole-wheat when making them for us)
¼ tsp Salt
1 Tbs Baking Powder
½ tsp Nutmeg
2 tsp Cinnamon
¾ C Skim Milk

Beat egg, milk, oil, and sugar. Stir in apples and cranberries. Combine dry ingredients and stir in with the wet mixture. Bake at 400` for 15-20 minutes.
I had the nutrional information for this recipe in its original state, but I tweaked it a little...still looking for a good website that will calculate that stuff for me. If anyone knows of one, please pass the URL along! :)
Just the muffin recipe I have been waiting for......oatmeal, cranberries, apples.....YUMMY! But Jane, do you really cook them at 450?

ReplyI hardly ever bake higher than 350', but this recipe called for 450', so I've always done it.
ReplyMaybe since it is a fairly dry batter, 450' allows them to cook quickly without drying out? I'm sure they would be fine lower - might be a bit more dry.
I have the nutrional information on this recipe, but I've changed a couple things from the original (milk instead of half & half, no nuts, WW flour) so it wouldn't be accurate. Sorry Linds! :)
