This is a follow-up to my popular post on recreating the Subway chocolate chip cookie at home. To be clear, I am in no way affiliated with Subway and this is not an official recipe from Subway. BUT if you like Subway's chocolate chunk cookies, I bet you'll love mine!
After some feedback from readers who were having trouble getting their dough to form a log to freeze, I decided to do a quick video to show you how to do it easily. And the amazing (and dangerous) thing about having this dough in the freezer? You are about 15 minutes away from the perfect chocolate chunk cookie at any given time!
Now that you know the easiest way to deal with the dough, I'll repost the recipe for any new readers who missed it the first time around.
1 C brown sugar, lightly packed
1/2 C white sugar
1/2 C white sugar
1/2 C butter, at room temperature
1/2 C
golden shortening
2 eggs, at room temperature (or warmed in a dish of warm water for 10 minutes)
1 1/2 tsp vanilla
2 1/2 C flour, spoon-filled and levelled
1 tsp baking soda
1 tsp salt
1 C chocolate chunks
Cream sugar and butter very well, scraping down sides of bowl frequently as needed. (And I mean very well. If you think it's creamed enough, scrape it down and beat for another minute) Beat in eggs and vanilla until incorporated. Blend in dry ingredients. Stir in chocolate chunks. Empty bowl onto plastic wrap. Form into a long skinny log, and place in freezer until well frozen (several hours). Remove from freezer and slice dough into 1/2" thick rounds. Place on baking sheet. Allow to come to room temperature (about as long as it takes to preheat the oven.) Bake at 375` for 9 minutes. Remove from oven and allow to rest on baking sheets for 5 minutes before removing to wire racks to cool completely.

I'm looking forward to trying these out! Question though, what is "golden shortening"? Is this different than basic Crisco? Thanks!
ReplyYou will see it right next to regular Crisco in the aisle. It's still a Crisco brand product, it's just a better substitute than regular shortening in baked goods that you want buttery, without the crisp finish of using butter. Good luck! Err on the side of slicing them too thick vs too thin. I'm sure they'll be a hit!

ReplyFollowed this recipe to a tee... I don't see anywhere that you use the crisco though, I read through it 5 times and no crisco? My cookies did not come out very good, they were dry and flaky :(
